Pumpkin Snickerdoodle Protein Bites:
Ready for the perfect sweater weather (fall) snack? Say hello to our Pumpkin Snickerdoodle Protein Bites! These little bites of heaven are like your favorite cookie had a healthy glow-up—packed with protein, pumpkin spice, and everything nice. They're easy to make, delicious to eat, and perfect for when you're craving something sweet and nutritious.
Ingredients:
- ¼ cup coconut flour
- 2 scoops Pumpkin Spice Protein
- ½ cup peanut butter
- ¼ cup canned pumpkin
- 2 tbsp honey
- ½ tsp vanilla extract (split)
- 2 tsp pumpkin pie spice
- 2 ½ tsp cinnamon
- 2 tbsp coconut sugar
Directions:
- In a large bowl, add coconut flour, protein powder, peanut butter, pumpkin, honey, vanilla, pumpkin pie spice and cinnamon (1/2 tsp). Mix until smooth.
- Roll into 12-15 bites.
- In a small bowl, whisk together the coconut sugar and remaining cinnamon.
- Roll bites into coconut sugar mixture.
- Place bites in the fridge to chill.
- When ready, ENJOY!
